While I generally prefer to bake from scratch, sometimes you have to suck it up and use a mix when you have a daughter who forgets to let you know in advance she’s going to need cupcakes for her class sooner than the day before.  Ahem.  Betty Crocker is my go-to for keeping cake mixes in my pantry for just such an emergency.  And now, things are even easier with new Betty Crocker Shake-N-Pour.  

While most baking mixes require eggs, water and butter or oil, these only require the addition of water.  See?  Easy. 

Even better, they come in a handy dandy resealable plastic jug, so you don’t even need to dirty mixing bowls or spoons or beaters – just add the water directly to the container, seal it and shake it up to mix everything together.  And it’s even easier to fill cupcake papers pouring directly from the jug – Princess Nagger had a lot of fun making a batch of cupcakes all on her own while I simply supervised.
