Monday’s can be fun – Anissa over at Our Chaotic Life is the hosts this wonderful Recipe Swap…since I like to be a Mad Scientist experiment in the kitchen and try new recipes (thankfully hubby is a willing guinea pig…as long as he has his arsenal of hot sauces, he’ll try just about anything) this is right up my ally so I can discover new recipes and share some of the ones I have enjoyed making as well. Join in the fun – the recipes don’t have to be your personal creations, just ones you enjoy making (or eating!) 🙂

Chicken Salad Wrap

INGREDIENTS:

2 cups

shredded Roasted Chicken

1 cup

shredded Monterey jack cheese

1

pear, peeled and chopped

½ cup

slivered almonds

½ cup

Raspberry Chipotle Dipping & Cooking Sauce*

large spinach tortillas


field greens

DIRECTIONS:

In medium bowl, combine chicken, cheese, pear, almonds and chipotle sauce; mix well.

Line spinach tortillas with field greens. Spread Chicken Salad over the greens and roll the tortillas tucking the ends. Cut in half at an angle and enjoy! For less mess, roll the tortillas in parchment paper before cutting in half and serve in the parchment paper.

*Sweet-tart raspberries and smoky chipotle peppers found in the sauces and marinades aisle, or you can make your own (recipe below).


Raspberry Chipotle Dipping & Cooking Sauce

INGREDIENTS:

2 cups

fresh raspberries or frozen unsweetened raspberries, thawed

1/4 cup

sugar

1/4 cup

ruby port

1

chipotle chile in adobo, from a 7 ounce can (more to taste)

DIRECTIONS:

Combine all ingredients in a heavy sauce pan and simmer, stirring occasionally, until sugar is dissolved.

Allow to cool a little if desired.

Transfer to a food processor or blender and blend until sauce is smooth.

Remove seeds from sauce using a fine mesh strainer if desired.

Note: For more heat, you can use the adobo the chilies are packed in if you like. It will definitely make it hotter!

  11. Dang, I had such high hopes for this when I saw it was chicken salad. Me LOVES chicken salad. But then you went and added FRUIT to it and just ruined it for me. Dang.
